Ingredients:
Tagliatelle | 600 | g |
Basil | 10 | g |
Arugula | 100 | g |
Scallion | 3 | un |
Olive oil | 60 | cc |
Garlic | 2 | cloves |
Parmesan cheese | 60 | g |
Whole shell mussels | 1,2 | kg |
Cherry tomatoes | 120 | g |
Instructions:
- Cook tagliatelle al dente in plenty of salted water.
- Blend arugula, basil, olive oil, garlic in a food processor until you get a soft and smooth sauce.
- Cut the scallions in 1,5-centimeter pieces and also cut the cherry tomatoes in halves.
- In a frying pan, stir-fry scallions and the sauce for some minutes. Add the mussels with their shells and the tomatoes, stir.
- Add tagliatelle, stir again and serve, drizzle grated cheese on top of every serving.
(Salt and spices should be used to the cook’s taste)
